A Breakfast to Fuel Your Soul

I’m a klutz, truth be known. The day after Soul’s 1st Anniversary party in December I sprained my ankle dancing at a Christmas party. The big difference – shoes. It’s a lot easier to dance in running shoes than high heels.

I worked really hard on my fitness game in 2015 and I purposefully chose to tackle my injury head on and work hard to rehab it so I could get back to my active lifestyle. I decided to really focus on what I was eating while being sidelined from Zumba so that I could still feel good and not gain any weight during the healing process.

To keep myself from losing motivation, I did exercises at home that kept me feeling as active as I could – push ups, sit ups, planking, arm exercises with small weights and walking my dogs.

I introduced this quick, easy and super healthy breakfast parfait into my morning routine and I love the energy it gives while feeling full and satisfied. You can change fruits to suit your tastes, but this is my current favourite set up. All ingredients organic for me.


Blueberry Breakfast Parfait

  • 1 cup blueberries
  • 1 Mandarin or small orange broken into pieces
  • Handful of raspberries or other berries
  • I cup coconut yogurt (Olympic Organic Probiotic is amazing!)
  • 1 tablespoon of pumpkin seeds
  • 1/4 cup raw oats
  • Sprinkle with cinnamon

Layer all of the ingredients in a bowl and enjoy!

I’m happy to report that after 4.5 weeks away, I was able to get back to dancing yesterday at Amie’s Low Impact Zumba class and it felt great!
